Avocado & Wasabi Spider Eggs

Avocado and wasabi spider eggs are a spicy Halloween treat originally conceived by Laura Bashar for Family Spice.

It has a prep time of 10 minutes, a cook time of 10 minutes, and serves a party of 4. However, including chilling time, this recipe will take a grand total of 8 hours.

Ingredients

To make these delicious October treats, you will need the following ingredients and supplies:

  • Small pot
  • Spoon
  • Bowl
  1. Red and blue food coloring (optional)
  2. Piping bag (optional)
  • 4 eggs
  • ½ avocado
  • 1 cup frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon wasabi paste
  • ½ teaspoon black sesame seeds
  • ¼ teaspoon salt

If you wish to not waste the other half of your avocado, you can double up this recipe.

Cooking instructions

  1. Place the 4 eggs and frozen blueberries into a small pot. Cover eggs with water, place lid over pot and bring to a boil over a high heat.
    1. For greater appearance, you can add red and blue food coloring to give eggs a purple effect, as seen in the image.
  2. Let eggs boil for 5 minutes, then turn off heat. Let sit for 10 minutes.
  3. Remove eggs from the blueberry water, one at a time. Gently press against eggs with the back of a spoon to crack the shell.
  4. Place your cracked eggs it a bowl and pour prepared blueberry water over them. Let eggs cool to room temperature and then place in refrigerator anywhere from 6 hours to overnight.
  5. Once ready, peel eggs and cut them in half lengthwise. Scoop out the yolks and place into a bowl.
  6. If not already done so, slice your avocado in half. Peel off its outer shell and remove the nut.
  7. Place the avocado half in the bowl along with your yolks, and then add in your wasabi paste, lemon juice, and salt. Mix together until you achieve a smooth consistency.
  8. Add mixture to a piping bag and pipe into hollowed egg halves. If you do not have a piping bag, a spoon will work almost as well. Chill until ready to serve.
    1. For easier piping, chill avocado mix in fridge for an hour first.
  9. Before serving, garnish eggs with your sesame seeds to represent spiders.
    1. You may also choose to add some charcoal salt for spooky effect.
